What can I do with these ingredients?
Tomorrow is shopping day. This is what I have on hand. I can mild chili con carne, 1 pkg corn tortillas, 1 lb cheddar cheese, 1 small white onion, and 1 lb ground hamburger. If I brown the hamburger, chop the onion, grate the cheese and layer all these in a casserole dish, then in the oven for maybe 30 minutes until the cheese is melted and bubbly, will it make an edible dish for dinner tonight? You have some other ideas?
You will have made what we call on the Coastal Bend in Texas....Mexican Lasagna.....I would not call it an enchilada casserole(no enchilada sauce)...At any rate it will be very tasty, in fact you might want to write it down cuz your family is going to love it. I would grate the onions and mix them in with the cheese(reserving some cheese w/o onions for the top of the dish). If you have any southwestern spices on hand, toss them into the browned, drained ground beef to punch up the flavor. ( i.e. cummin, garlic powder, papirika and a pinch of oregano and of course salt & pepper) Necessity being the mother of invention, some of our best dishes are created the day before shopping day. Enjoy your meal.
